The challenge of retaining carbonation in warmer climates

Posted in Industry News

Picture this. It’s a scorching hot day, the sun is shining, and there’s nothing quite like reaching for a cold, refreshing fizzy drink.

You open the bottle, hear that familiar hiss and take your first sip. Perfect. But as the minutes pass and your drink begins to warm up, something changes. The bubbles start to disappear, the fizz fades and that refreshing drink isn’t quite so refreshing any more. Sound familiar?

For consumers, it’s a big disappointment. For beverage manufacturers, particularly those supplying markets with warmer climates, it’s a challenge worth solving.

So, why does heat have such an impact on carbonation and what can manufacturers do to help their drinks stay fizzier for longer?

Why does heat make fizzy drinks go flat?

Carbonation is what gives soft drinks their characteristic sparkle, refreshing bite and satisfying tingle. It’s created by dissolving carbon dioxide (CO₂) into the liquid under pressure. But keeping that CO₂ where it belongs isn’t always straightforward, particularly when temperatures start to rise.Several factors can influence how quickly a carbonated drink loses its fizz.

Higher temperatures means less dissolved CO₂

Here’s a little science behind the sparkle. Carbon dioxide is more soluble in cold liquids than warm ones. As the temperature of a drink increases, its ability to hold dissolved CO₂ decreases. While a sealed bottle or can helps keep the CO₂ contained, things change once the drink is opened. With the pressure released, carbon dioxide begins escaping from the liquid. And the warmer the drink, the faster that process can happen. It’s one reason why a chilled carbonated drink can retain its fizz better than one left sitting in the sunshine.

Pressure plays an important role

Ever opened a warm bottle of fizzy drink and been greeted by an enthusiastic burst of bubbles? That’s pressure at work. Inside a sealed carbonated drink, CO₂ exists in equilibrium between the liquid and the space above it. As temperatures rise, the pressure inside the container increases. Once the bottle is opened, that pressure drops, allowing dissolved CO₂ to escape.

The result? More bubbling, potentially more foaming, and a drink that can lose its refreshing sparkle more quickly.

Movement makes a difference

Heat isn’t the only challenge. Think about what happens when you shake a bottle of fizzy drink before opening it, the sudden release of pressure can create quite a spectacle! Agitation, whether from transportation, handling or pouring, can encourage CO₂ to form bubbles and escape once the container is opened. Combine movement with warmer temperatures, and carbonation retention becomes even more challenging. For beverage manufacturers distributing products across long distances and through warmer climates, it’s another factor to consider.

Why does carbonation retention matter to beverage manufacturers?

For consumers, fizz is much more than a collection of bubbles. It plays an important role in how a carbonated drink tastes, feels and refreshes. That initial burst of carbonation delivers the familiar tingle and bite consumers expect. It also contributes to the overall balance of the drink, influencing how sweetness, acidity and flavour are perceived. When carbonation disappears too quickly, the drinking experience can change. And that matters because consumers don’t always finish their drinks immediately.

Whether they’re enjoying a soft drink over lunch, relaxing outdoors or sipping a refreshing beverage throughout the afternoon, they expect it to remain enjoyable beyond the first few mouthfuls. For manufacturers, the challenge is clear: how do you maintain that refreshing fizz from the first sip to the last?

Clever carbonation – helping drinks stay fizzier for longer

Here’s where a little clever ingredient technology can make a big difference. At CO₂Sustain, we’ve developed TM², an innovative ingredient designed to help carbonated beverages retain their fizz for longer. It works by influencing bubble behaviour, helping create smaller, more uniform bubbles and improving carbonation stability once the drink is opened. By helping reduce the rate at which carbonation is lost, it allows consumers to enjoy that refreshing fizz, tingle and bite for longer.

And importantly, it’s designed to work within existing beverage formulations. Our technology focuses on the drinking experience, helping manufacturers deliver a more consistent and enjoyable carbonated drink from the first sip to the last.

Better fizz, better drinking experience

Of course, great carbonation isn’t simply about having more bubbles, it’s about having the right bubbles, delivering the right drinking experience. TM² helps create a finer, more consistent bubble structure, improving the way carbonation is experienced in the mouth. It can also help reduce excessive foaming when a drink is poured, keeping more of that refreshing carbonation where consumers want it: in their drink.

And there’s another benefit.

TM² can also improve the taste of beverages formulated with high-intensity sweeteners, helping reduce unwanted bitterness and lingering aftertastes. For manufacturers developing reduced-sugar and zero-sugar carbonated drinks, that means one ingredient can help address two important challenges: great taste and longer-lasting fizz.

Keeping the sparkle in warmer climates

From the Middle East and Africa to Latin America and Asia, beverage manufacturers operating in warmer climates face particular challenges when it comes to carbonation. High ambient temperatures, lengthy distribution routes and varying storage conditions can all influence beverage quality. Whilst good temperature management, packaging and distribution practices remain important, ingredient innovation offers another way to help protect the drinking experience.

By improving carbonation retention after opening, TM² helps manufacturers deliver drinks that stay refreshing for longer, even when ideal serving conditions aren’t always possible. It’s a small addition to a formulation that can make a noticeable difference to the consumer experience.  At CO₂Sustain, we believe clever ingredient technology can help manufacturers achieve just that.

With TM², we’re helping beverage manufacturers create better-tasting drinks with longer-lasting fizz, bringing together beverage quality and commercial advantage. Because when it comes to carbonation, the first sip matters. But so does the last.
